Polynesian cuisine is based on simple ingredients, linked to the sea, the land, and the tradition of sharing. Pua'a (pork), roasted or cooked in a traditional oven, is served at large meals and celebrations. Fāfā chicken, cooked with taro leaves and coconut milk, is a classic family meal. Skewers, especially heart skewers, are very popular, especially in food trucks and at events. Grilled over a fire and well seasoned, they are one of the simple and beloved flavors of everyday life. Traditional side dishes complete the meal: uru, taro, sweet potato, and cassava, boiled, grilled, or baked in a traditional oven. They add consistency and balance to dishes, often served with coconut milk or simple sauces. Certain dishes, such as chao men (Chinese-influenced stir-fried noodles), have become staples of the local cuisine. Widely available in food trucks, they are part of the island's culinary landscape. When it comes to sweets, po'e is the quintessential dessert. Made with fruits such as bananas, papaya, or pumpkin, starch, and coconut milk, it is served warm or cold. You can also find bananas with coconut, fresh fruit, or simple coconut-based dishes. In Moorea, these dishes are not set in stone. They evolve according to families, places, and occasions, but remain deeply rooted in the territory. It is a generous, accessible cuisine, made to be shared.
